Meatloaf

The Local Butcher Shop’s Mmm Mmm Good Meatloaf

Makes 1 loaf pan of moist meatloaf

Ingredients:

2 1/3 pounds of ground beef

1/2 pound of  ground pork belly

2 eggs

2 cups of breadcrumbs

2 3/5 cups cream

1 medium yellow onion

1 bunch of parsley

1 bunch of sage

16 grams of salt

1.5 grams of crushed red chili pepper

2.5 grams of black pepper corns

1 gram of fennel seeds

4 cloves of garlic

Preparation:

Pre-heat oven to 400 degrees.

Dice the onion.

Finely chop the parsley and sage.

In a small bowl, pour cream over breadcrumbs and gently mix.  Let breadcrumbs soak up cream.

In a spice grinder, grind chili flakes, black peppercorns and fennel seed until finely ground.

Pound garlic in a mortar with a pestle until the garlic is goopey and paste-like.

Beat eggs.

Put the ground beef and ground pork belly in a bowl (or mixing bowl).  Add eggs, onion, bread crumbs, spices, and herbs.  Mix until well combined.

Pack mixture into loaf pan and  bake at 400 degrees for 1 hour.

Let cool.  Then unmold the meatloaf by flipping the pan over.  Slice and serve or re-heat the loaf in a low oven.
