Whew! We made it through our “soft-opening” week and our Grand Opening Week! What a whirlwind of activity! The Shop is coming together; a few more pieces of art are on the way, a few more retail products are eagerly anticipated, and a brace for our butchery table is being installed on Monday, but other than that, we are pretty much there. Oh, and the long awaited hook and rail system which is crawling towards completion. Once we receive the hook and rail system, we will be able to receive beef in quarters (right now we have to get the beef cut into eigths in order for it to fit on our shelves). It will be a very exciting finale to the opening of The Local Butcher Shop…the pièce de résistance!
